Fried Tofu & Vegetables

  • 2 tsp. cornstarch
  • 200g block of Smarrt Marinated Tofu
  • 1 tbsp. vegetable oil or olive oil
  • 1 tbsp. dry sherry wine (optional)
  • 1 tbsp. soy sauce ½ tbsp. rice vinegar or plain vinegar
  • 1 garlic clove
  • A pinch of salt
  • Green vegetables of your choice
  • In a small bowl, stir together soy sauce, vinegar, sherry, crushed garlic, 2 tbsp. water. Whisk in cornstarch and set aside.
  • Cut the tofu block lengthwise, then into ¼-inch slices/cubes.
  • Heat the oil in a well-seasoned or nonstick pan over medium-high to high heat.
  • Add the tofu to the pan. Shake it around to distribute the oil and let fry for a few minutes undisturbed. When the tofu is golden on one side, turn it over and fry the other side. THE TOFU MUST NOT STICK ON PAN. SO YOU MUST USE ENOUGH OIL OR A NON STICK PAN. OR. YOU MAY GRILL THE TOFU CUBES OR BAKE THE Tofu CUBES ON A GREASED TRAY/PAN
  • Remove the tofu from the pan.
  • Add the green vegetable in batches if necessary, to the pan. Stir-fry until wilted for 2-3 minutes.
  • Whisk the sauce to redistribute the cornstarch (check step 1 above).
  • Put the tofu back in the pan and toss with the sauce and greens to combine. Turn down the heat to medium and cook 5-7 minutes, until the tofu and greens are well coated with the sauce and the greens are tender.
  • Garnish with the parsley, cucumber or anything that your creative mind gives you and serve.
