- 200g of Smart Foods’ Smarrt marinated Tofu/Extra Firm Plain Tofu
- 1/2 cup whole wheat pastry flour
- 1 Tbsp. vegetable oil 1 tsp. cinnamon
- 1 tsp. mixed spice 2 Tbsp. honey
- 2 egg whites
- 1 small apple, peeled, sliced very thinly
- margarine (Oil) for frying, if desired
- Combine first 6 ingredients and beat with electric mixer on high until smooth, about 1 Minute.
- In a separate bowl, beat egg whites until stiff but still shiny.
- Fold Tofu/flour mixture into egg whites and blend thoroughly.
- Lightly butter a non-stick frying pan and place several apple slices on bottom.
- Pour 1/2 cup batter over apples for each pancake.
- Fry covered. Brown both sides and serve hot with your favorite topping.
OR - You may bake in the oven till golden brown.
